I'm a manga chad & I always read the mangas first before diving into the animes because manga is superior to anime. Blame Toriyama for all the retconning & plotholes in both Daima & Super. He completely forgot most of the Dragonball lore after retiring from it for over 20 years only to dive back in as an old man. The Super manga itself was made by some other guy, but the story behind the manga was definitely Toriyama's doing. Sorry if you can't look past his incompetence.

Bulma having a big sister is just a neat fact Toriyama added in the Jaco the Galactic Space Patroller manga from 2014 (same year as Resurrection F) in a story showing that the Earth Dragon Balls & Goku's arrival on Earth weren't fully unnoticed by beings from Outer Space.
For the Super anime, Old Kai's an ally of the Z Fighters, at no point there was a reason for then to see how fusions between kais and mortals worked genetically during the Buu Saga. Plus, neither Old Kai nor the old witch were COMPLETELY inmortal like Future Zamasu.
While the Super manga has Fused Zamasu damaging his inmortal body by using the Powerhouse state and taking damage during battles, and almost died from a slow version of Hakai performed by Goku.

But if someone chooses to ignore things like the Heroes & Xenoverse series (which can fall in the Expanded Universe category of fiction) then most casual fans & audiences wouldn't have much of an issue with the minor retcons, some even fall into the soft-retcon category.
