Kobayashi didn't swing that way towards the start of the series, iirc. Eventually she warmed up to Tohru and kinda started reciprocating those feelings. Therefore, she is Bi.

There's no indication that she was swinging toward men at the start of the series either, she was generally indifferent towards romance (and subsequently, sexual activities). So, at least in the beginning she was way closer to be asexual than anything.
