During the clone wars all of the clone troopers were male, but after the old republic fell and the imperial army was put in its place one of the first things Palpatine did was to stop creating new clones and started conscripting/recruiting people from Imperial controlled worlds.
By the time the movies take place all but a few clone troopers are dead, because of the accelerated ageing having killed them all off, and the Storm Trooper army is made up of men and women. Though admittedly, it's mostly just shown as men, there are women. The Force Unleashed games had a female imperial pilot for example. Sadly in the movies it's always shown as a male only group, but the imperial army does hire both men and women, but it is a a sexist/racist/xenophobic group, and only a rare few females/non-humans have been able to move up the ranks. So that's why it's primarily a male only thing.
A lot of the expanded universe books cover the stuff. You should try picking some up. I got a shelf full of them, and they are great reading.

There aren't any female stormtroopers seen until the Legacy era, even if they occasionally pop up in the Imperial Army and Navy.
