Mud is a mixture of water and earth, but the water does not create gaps between the earth like the air does between the rocks in sand. If you look at the scenes where the show visualizes Toph's vision, it's clear she can see in high detail vibration waves, essentially feeling the texture of objects from a distance, rather than perceiving their color
It's safe to say, Toph can feel absolutely every part of Sokka's body right now, in vivid textural detail
