Ridges: Ehh, to indulge nerd trivia for a moment, Ken Masters is American, born in the USA and raised in America, but is 3/4 Japanese (half coming from his mother, the other quarter from his father). And yes, he does dye his naturally black hair blonde.
Ryu's hair color has only changed due to artistic direction and/or technical limitations on the graphics, and is generally depicted as dark brown/black (chalk the red up to limited palettes for the first game, at least).
